This Rockfish Recipe, a favorite creation of our Chef, ROCKS!  The sweet orange marmalade, combined with the tanginess of the lemon zest and the earthy spice of our gourmet mustard brings out the flavor of sweet Rockfish fillets.   Couple with a nice Pinot Grigio, fresh vegetables and a light salad and you have a perfect, easy to prepare meal that will have your family and guests feeling the California Coast with each bite!

Rockfish Cakes with Orange Marmalade
Instructions
  1. Pre-heat Oven to 400
  2. Place fish on parchment lined sheet pan
  3. Drizzle with EVOO and season liberally with salt and pepper
  4. Bake for approximately 15 minutes or until easily flakes with fork, but is still intact
  5. Let rest at room temperature until cool enough to handle with bare hands.
  6. In large bowl mix aioli, mustard, parsley and 1/2 cup panko.
  7. Add fish and lightly mix together (do not over mix, some large pieces are ok). The consistency should be pretty wet, but also should hold together when formed into cakes.
  8. Adjust by adding more aioli/panko to reach desire consistency
  9. Season to taste with salt & pepper.
  10. Form small cakes no more than 3/4" think and coat each side with panko.
  11. In a medium sized saute pan heat just enough oil to coat bottom of pan until very hot, but not smoking.
  12. Cook cakes approximately 1 minute on each side or until golden in color an dhot in the middle.
  13. SPrinkle with toasted coconut and serve with spicy Meyer lemon orange marmalade!
Meyer Lemon Orange Marmalade Sauce
  1. In a small Sauce Pan heat apple cider vinegar, lemon juice, lemon zest and red pepper flakes.
  2. Bring to a boil and cook for 1 minute.
  3. Add marmalade and cook for 2 minutes.
